Tipsy Triple-Chocolate Shakes and Strawberries

A very grown up version of a classic chocolate shake! Quick and easy to make, these will be a hit on any spring or summer day. Try at your next pool party for the adult chaperones!

Prep Time: 5 Mins
Yields: 4 Servings

Ingredients
8 shots chocolate cream liqueur (recommended: Bailey's)
12 scoops chocolate ice cream
4 cups chocolate milk
Whipped cream, canister
1 dark chocolate bar, for garnishing
8 large stem strawberries, rinsed and dried

Directions
1. Working in 2 batches, blend the chocolate liqueur with ice cream and chocolate milk until thick but smooth.
2. Pour shakes into tall glasses and garnish with whipped cream.
3. Use a vegetable peeler to shave dark chocolate on top.
4. Serve 2 large stem berries alongside for dunking and serve with straws and long spoons on plates to catch the drips!

Strawberry-Arugula Salad with Ricotta Topping

Strawberry-Arugula Salad with Ricotta Topping via "The Kitchn"


(serves 8-10)

Ingredients
4 pints strawberries, washed, hulled, and sliced into quarters
1 pint raspberries, washed and blotted dry
1-2 cups sliced almonds
1 small bunch baby arugula, sliced into thin ribbons
Kosher salt
2 lemons, zested and juiced
1 1/2 cups fresh, drained ricotta cheese
2 tablespoons sugar (or more, to taste)
1/2 teaspoon nutmeg

Directions:
1. Toss the strawberries, raspberries, almonds, and sliced arugula with a pinch of kosher salt and the zest of 1 lemon.

For the dressing:
1. In a separate bowl, mix the lemon juice and remaining lemon zest with the ricotta, sugar, and nutmeg.
2. Taste and sweeten to taste, if necessary.

Serve the salad with the dressing on the side.

According to the authors at “The Kitchn”, this salad goes exceedingly well with this brunch cocktail:

Lemon Myrtle
makes one drink (Could also be batched this way as a pitcher drink to serve a crowd.)

Ingredients:
2 ounces Chardonnay (or other white wine)
1 ounce limoncello
1/2 ounce triple sec or other orange liqueur
1/2 ounce fresh lemon juice
5-6 fresh mint leaves
1/3 ounce simple syrup (optional)

Directions:
1. Gently muddle mint leaves in bottom of glass
2. Add simple syrup and remaining ingredients then add ice.
3. Shake vigorously and strain into a chilled martini glass rimmed in super fine sugar.
4. Garnish with a lemon wheel and if you like on the rocks, some ice.

Strawberry and Tequila Cooler

Ingredients
16 ounces strawberries, fresh
Lemon slices
4 sprigs fresh mint, plus leaves for garnish
4 ounces agave syrup
6 to 8 ounces tequila
Crushed ice
Club soda

Directions
1. Muddle the strawberries with the lemon slices, mint, and agave syrup in a large pitcher.
2. Add the tequila and stir well.
3. Pour over rocks glasses filled with crushed ice.
4. Top each glass with club soda and garnish with mint leaves before serving.

Claire Robinson's Dark and Spooky

Makes: 1 Drink
Prep Time: 5 minutes

 

 

Ingredients
Black decorating sugar, for the glass
Juice of 1 lime, plus 1 lime wedge
1/4 cup dark rum
1/4 cup ginger beer or all-natural ginger ale
1 black gummy spider

Directions
Spread out the black sugar on a small plate.
Rub the lime wedge around the rim of a rocks glass; dip the glass in the black sugar, then fill with ice.
Combine the rum and lime juice in a cocktail shaker.
Fill with ice and shake well.
Carefully strain into the glass, minding the sugar on the rim.
Top the drink with ginger beer and add the gummy spider.
