Chocolate and Strawberry Stuffed French Toast

Chocolate and Strawberry Stuffed French Toast

Ingredients
3 eggs
1 1/4 cups nonfat milk
1/2 teaspoon vanilla extract
1/4 cup part-skim ricotta cheese
8 slices of whole-wheat sandwich bread, crusts removed
1 (8-ounce) container strawberries, hulled and sliced
4 teaspoons bittersweet chocolate chips
Cooking spray
2 teaspoons confectioners' sugar

Directions
In a large bowl, whisk together the eggs, milk and vanilla. Set aside.

Place 1 tablespoon of ricotta in the center of 4 of the pieces of bread and spread around slightly. Top with about 6 slices of strawberries and a teaspoon of chocolate chips. Cover each with another piece of bread to make a "sandwich".

Spray a large nonstick skillet or griddle with cooking spray and preheat. Carefully dip each of the "sandwiches" into the egg mixture until completely moistened. Then place on the skillet and cook over a medium heat for 3 to 4 minutes per side, until the outside is golden brown and the center is warm and chocolate is melted.

Transfer to serving places. Top with remaining strawberries and sprinkle with confectioners' sugar.

Prep Time: 5 Mins
Yields: 4 Servings

Ingredients
8 shots chocolate cream liqueur (recommended: Bailey's)
12 scoops chocolate ice cream
4 cups chocolate milk
Whipped cream, canister
1 dark chocolate bar, for garnishing
8 large stem strawberries, rinsed and dried

Directions
1. Working in 2 batches, blend the chocolate liqueur with ice cream and chocolate milk until thick but smooth.
2. Pour shakes into tall glasses and garnish with whipped cream.
3. Use a vegetable peeler to shave dark chocolate on top.
4. Serve 2 large stem berries alongside for dunking and serve with straws and long spoons on plates to catch the drips!

Ingredients
1 (18.25-ounce) box white cake mix
1 (3-ounce) box strawberry-flavored instant gelatin
1 (15-ounce) package frozen strawberries in syrup, thawed and pureed
4 large eggs
1/2 cup vegetable oil
1/4 cup water
Strawberry cream cheese frosting, recipe follows
Strawberry Cream Cheese Frosting
1/4 cup butter, softened
1 (8-ounce) package cream cheese, softened
1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
1/2 teaspoon strawberry extract
7 cups confectioners' sugar
Freshly sliced strawberries, for garnish, optional

Directions
Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.

In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.

Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.

For the frosting:
In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup of the strawberry puree and the vanilla extract. (The rest of the puree is leftover but can be used in smoothies or on ice cream for a delicious treat.) Gradually add confectioners' sugar, beating until smooth.

Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

Rachael Ray’s Chocolate Stuffed Roasted Strawberries

Ingredients
12 extra-large strawberries (the bigger the better!)
1 to 2 ounces bittersweet chocolate, chopped
1 teaspoon sugar, optional
Spray whipping cream (the real kind in the can in the dairy section)
Cocoa powder, for garnishing
Directions
Preheat the oven to 400 degrees F.

Directions:
Slice the tops of the berries off just below the stem.
Cut the tips off (about 1/4-inch), so that the berries will sit upright.
Next, use a small spoon or a melon ball scoop to hollow out the strawberries, working from their tops, in order to create a cavity in each one.
Stuff some chocolate into the cavity of each strawberry and place them upright in a baking dish.
Lightly sprinkle the berries with sugar, if using.
Roast the berries until soft and the chocolate is melted, about 10 to 12 minutes.

To serve, place 3 strawberries on a dessert plate in a triangle. If the berries have given off liquid in the baking dish, spoon it over them. Spray a small mound of cream in the center of the berries, and top each berry with a rosette of cream. Sift a little cocoa powder over the plate, and serve!

Barefoot Contessa’s Strawberry Country Cake

Yields: 2 (8-inch) cakes

Ingredients
12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
2 cups sugar
4 extra-large eggs, at room temperature
3/4 cup sour cream, at room temperature
1/2 teaspoon grated lemon zest
1/2 teaspoon grated orange zest
1/2 teaspoon pure vanilla extract
2 cups all-purpose flour
1/4 cup cornstarch
1/2 teaspoon kosher salt
1 teaspoon baking soda

For the filling for each cake:

1 cup (1/2 pint) heavy cream, chilled
3 tablespoons sugar
1/2 teaspoon pure vanilla extract
1 pint fresh strawberries, hulled and sliced
Directions
Preheat the oven to 350 degrees F.

Directions:
Butter the bottom of two 8-inch cake pans. Then line them with parchment paper and butter and flour the lined pans.

Cream the butter and sugar on high speed in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy. On medium speed, add the eggs, 1 at a time, then the sour cream, zests, and vanilla, scraping down the bowl as needed. Mix well. Sift together the flour, cornstarch, salt, and baking soda. On low speed, slowly add the flour mixture to the butter mixture and combine just until smooth.

Pour the batter evenly into the pans, smooth the tops, and bake in the center of the oven for 40 to 45 minutes, until a toothpick comes out clean. Let cool in the pans for 30 minutes, then remove to wire racks and let cool to room temperature. If using 1 cake, wrap the second well and freeze.

To make the filling for one cake: whip the cream, sugar, and vanilla in a mixer fitted with the whisk attachment until firm. Slice one of the cakes in half with a long, sharp knife. Place the bottom slice of the cake on a serving platter, spread with 1/2 the whipped cream and scatter with sliced strawberries. Cover with the top slice of the cake and spread with the remaining cream. Decorate with strawberries.

Ingredients
4 large, ripe strawberries, finely chopped
3 tablespoons balsamic vinegar, eyeball it
1/3 cup extra-virgin olive oil, eyeball it

1. Place strawberries in a shallow bowl with vinegar and let stand 10 minutes.
2. Whisk in extra-virgin olive oil and season the dressing with salt and pepper.

Strawberry Leaf Infusion For Acne Recipe

1/4 cup strawberry leaves
1 1/2 cups boiling water

Directions:
1. Pour water over strawberry leaves in a glass bowl and cover.
2. Steep for 2 hours.
3. Strain and pour the water into a clean jar, seal with a lid and refrigerate.
4. Soak a wash cloth with the infusion, heat it then lay it on your face once a day for 5-10 minutes.

A warm wet wash cloth is a perfect relaxer before bed or after an extra stressful day at work, and while it relaxes you, it helps keep your skin clear!

Also, you can use this infusion to keep skin clear by washing with it twice daily (morning & bedtime).

Yields: 12 Mini Pies

Ingredients
Crust:
Vegetable oil cooking spray
2 unroll-and-bake refrigerated 9-inch pie crusts (recommended: Pillsbury)
Filling:
2 tablespoons honey
1/2 tablespoon lemon juice
1/2 tablespoon arrowroot
1/2 teaspoon grated orange zest
8 medium strawberries, hulled and cut into 1/4-inch pieces, to yield about 1 1/4 cups
1 egg, beaten
Special equipment: a 12-count nonstick mini-muffin pan, a 3-inch round cookie cutter, a 2-inch round cookie cutter

Directions
1. Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F.

For the crust:
1. Spray a 12-count nonstick mini-muffin pan with vegetable oil cooking spray.
2. Put a strip of parchment paper, 1-inch wide and 5-inches long into each muffin cup, allowing the excess paper to overhang the sides of the cups.
3. Unroll the pie crust and using round cookie cutters, cut out 12 (3-inch) circles and 12 (2-inch) circles of dough.
4. Lightly press the 3-inch circles of dough into the bottom and sides of the prepared muffin cups.

For the filling:
1. In a small bowl, whisk together the honey, lemon juice, arrowroot, and orange zest until smooth. Stir in the strawberries.

2. Spoon the filling into the muffin cups and using a pastry brush, lightly brush the edges of the dough with beaten egg.
3. Put the 2-inch circles of dough on top.
4. Using the tines of a fork press the edges of the dough together to seal.
5. Lightly brush the tops of the pastry with the beaten egg.
6. Using the tip of a knife, make a 1/4-inch wide slit in the center of each pie.
7. Bake until the crust is golden, about 14 to 15 minutes.
8. Remove from the oven and cool for 30 minutes.
9. Using the overhanging parchment paper as handles, remove the pies from the pan. Remove the parchment paper and serve.

Barefoot Contessa’s Strawberry Tarts with Pastry Cream

Yields: 4 tarts

Strawberry Tarts
Ingredients
1 1/4 cups all-purpose flour
3 tablespoons sugar
1/2 teaspoon kosher salt
6 tablespoons (3/4 stick) cold unsalted butter, diced
2 tablespoons cold shortening (recommended: Crisco)
1/4 cup ice water
2 cups Pastry Cream, (recipe below)
2 pints whole strawberries, hulled and halved
1/3 cup apricot jelly
3 tablespoons shelled pistachios, halved, optional
4(4 1/2 inch) Tart Pans With Removable Sides

Directions
1. Combine the flour, sugar, and salt in a small bowl and place in the freezer for 30 minutes.
2. Put the flour mixture in the bowl of a food processor fitted with a steel blade.
3. Add the butter and shortening and pulse about 10 times, or until the butter is in the size of peas.
4. Add the ice water and process until the dough comes together.
5. Dump on a well-floured board and form into a disk. Wrap in plastic and chill for at least 30 minutes.

Meanwhile, preheat the oven to 375 degrees F.

6. Roll out the dough and fit into 4 (4 1/2-inch) tart pans with removable sides. Don't stretch the dough when placing it in the pans or it will shrink during baking. Cut off the excess by rolling the pin across the top of each pan.
7. Line the tart shells with a piece of buttered aluminum foil, butter side down, and fill them with dried beans or rice.
8. Bake for 10 minutes.
9. Remove the beans and foil, prick the bottom of the shells all over with a fork, and bake for another 15 to 20 minutes until lightly browned. Set aside to cool.

10. Before serving, fill the tart shells with the pastry cream.
11. Arrange the berries decoratively on top of the cream.
12. Melt the apricot jelly with 1 teaspoon of water and brush the top of the tarts.
13. Sprinkle with pistachios, if using, and serve.

Pastry Cream (Yield: 2 cups)
Ingredients:
5 extra-large egg yolks, room temperature
3/4 cup sugar
3 tablespoons cornstarch
1 1/2 cups scalded milk
1/2 teaspoon pure vanilla extract
1 teaspoon Cognac
1 tablespoon unsalted butter
1 tablespoon heavy cream

Directions:
In the bowl of an electric mixer fitted with the paddle attachment, beat the egg yolks and sugar on medium-high speed for 4 minutes, or until very thick. Reduce to low speed, and add the cornstarch.

With the mixer still on low, slowly pour the hot milk into the egg mixture. Pour the mixture into a medium saucepan and cook over low heat, stirring constantly with a wooden spoon, until the mixture thickens, 5 to 7 minutes. Don't be alarmed when the custard comes to a boil and appears to curdle; switch to a whisk and beat vigorously. Cook, whisking constantly, for another 2 minutes; the custard will come together and become very thick, like pudding. Stir in the vanilla, Cognac, butter, and heavy cream. Pour the custard through a sieve into a bowl. Place plastic wrap directly on the custard and refrigerate until cold.

Strawberry Pie

Prep Time: 30 minutes
Serves: 8

Ingredients
Crust:
2 cups all-purpose flour
1 teaspoon salt
3/4 cup shortening
5 tablespoons cold water
Filling:
1 cup sugar
5 tablespoons cornstarch
7 ounces lemon-lime soda
1 quart whole strawberries
Red food coloring, if desired

Directions
For the crust:
1. Spoon flour into measuring cup and level. Combine flour and salt in a medium bowl.
2. Cut in shortening using a pastry blender until all flour is blended to form pea-sized chunks.
3. Sprinkle with water, 1 tablespoon at a time.
4. Toss lightly with fork until dough forms a ball.
5. Press dough between hands to form a 5 to 6-inch pancake.
6. Lightly flour rolling surface and rolling pin. Roll dough into circle.
7. Trim 1-inch larger than upside-down pie plate. Loosen dough carefully.
8. Fold dough into quarters. Unfold and press into pie plate. Fold edge under. Flute or crimp edge.

For the filling:
1. Blend sugar and cornstarch in a saucepan; add lemon-lime soda.
2. Cook stirring until smooth and thick.
3. Add strawberries and cook for a few minutes. If desired, add red food coloring.
4. Pour into cooled pie shell. Chill. Top with whipped cream if desired.

1 cup Strawberries, chopped
1 can Diced Tomatoes, drained
1 small White Onion, chopped
1 Jalapeno, seeded and minced

1 TBS Vegetable Oil
A pinch Salt

Directions:
1. Combine all ingredients in a large bowl
2. Mix well.
3. Chill, covered for 2 hours before serving.

Strawberry-Arugula Salad with Ricotta Topping

Strawberry-Arugula Salad with Ricotta Topping via "The Kitchn"


(serves 8-10)

Ingredients
4 pints strawberries, washed, hulled, and sliced into quarters
1 pint raspberries, washed and blotted dry
1-2 cups sliced almonds
1 small bunch baby arugula, sliced into thin ribbons
Kosher salt
2 lemons, zested and juiced
1 1/2 cups fresh, drained ricotta cheese
2 tablespoons sugar (or more, to taste)
1/2 teaspoon nutmeg

Directions:
1. Toss the strawberries, raspberries, almonds, and sliced arugula with a pinch of kosher salt and the zest of 1 lemon.

For the dressing:
1. In a separate bowl, mix the lemon juice and remaining lemon zest with the ricotta, sugar, and nutmeg.
2. Taste and sweeten to taste, if necessary.

Serve the salad with the dressing on the side.

According to the authors at “The Kitchn”, this salad goes exceedingly well with this brunch cocktail:

Lemon Myrtle
makes one drink (Could also be batched this way as a pitcher drink to serve a crowd.)

Ingredients:
2 ounces Chardonnay (or other white wine)
1 ounce limoncello
1/2 ounce triple sec or other orange liqueur
1/2 ounce fresh lemon juice
5-6 fresh mint leaves
1/3 ounce simple syrup (optional)

Directions:
1. Gently muddle mint leaves in bottom of glass
2. Add simple syrup and remaining ingredients then add ice.
3. Shake vigorously and strain into a chilled martini glass rimmed in super fine sugar.
4. Garnish with a lemon wheel and if you like on the rocks, some ice.

Ingredients:
Fresh Strawberries
About a teaspoon of baking soda.

Directions:
1. First mash a fresh strawberry and add about a tsp. of baking soda.
2. Spread on toothbrush and rub strawberry mash onto teeth.
3. Leave for a couple minutes then brush teeth clean.
4. Rinse mouth well.

Chocolate Covered Strawberries

Ingredients
6 ounces semisweet chocolate, chopped
3 ounces white chocolate, chopped
1 pound strawberries with stems (about 20), washed and dried very well

Directions
1. Put the semisweet and white chocolates into 2 separate heatproof medium bowls.
2. Fill 2 medium saucepans with a couple inches of water and bring to a simmer over medium heat.
3. Turn off the heat; set the bowls of chocolate over the water to melt.
4. Stir until smooth.

(Alternatively, melt the chocolates in a microwave at half power, for 1 minute, stir and then heat for another minute or until melted.)

5. Once the chocolates are melted and smooth, remove from the heat.
6. Line a sheet pan with parchment or waxed paper.
7. Holding the strawberry by the stem, dip the fruit into the dark chocolate, lift and twist slightly, letting any excess chocolate fall back into the bowl.
8. Set strawberries on the parchment paper.
9. Repeat with the rest of the strawberries.
10. Dip a fork in the white chocolate and drizzle the white chocolate over the dipped strawberries.
11. Set the strawberries aside until the chocolate sets, about 30 minutes.

Transfer to a bowl and freeze, uncovered, until cold (about 10 minutes).
 
Transfer the ice cream to a microwave safe bowl and heat at 30 percent power in 10-second intervals, stirring until softened, about 50 seconds total.
 
Spread even in a 9x13 inch-baking dish and freeze while strawberry mixture chills. Dollop tablespoons of the strawberry mixture all over the ice cream then swirl it gently through the ice cream with a spoon.
 
Spoon into molds (or paper cups like I did) and add wooden Popsicle sticks. I used the wide craft sticks. I let the pops freeze for about 20 minutes before I put the sticks in. Freeze until firm, about an hour and a half, or up to 4 days covered.

Strawberry and Tequila Cooler

Ingredients
16 ounces strawberries, fresh
Lemon slices
4 sprigs fresh mint, plus leaves for garnish
4 ounces agave syrup
6 to 8 ounces tequila
Crushed ice
Club soda

Directions
1. Muddle the strawberries with the lemon slices, mint, and agave syrup in a large pitcher.
2. Add the tequila and stir well.
3. Pour over rocks glasses filled with crushed ice.
4. Top each glass with club soda and garnish with mint leaves before serving.
